While yes, three large egg whites are only 51 calories — they’re also only 11g of protein, not 15.
Three large egg yolks are not 204 calories, but 162 calories; not 18g of fat, but 13.5g of fat. There is 8.1g of protein in 3 large egg yolks (which isn’t even mentioned in the picture above).
More importantly, the yolk contains essential minerals: three large egg yolks (pictured) would yield 52.5% of the DRI for selenium, 28.2% of the DRI for phosphorous, 7.5% of the DRI for iron (women)/15% of the DRI for iron (men), and 10.5% of the DRI for zinc.
In terms of vitamins, three large yolks (pictured) contains 60% of the DRI for choline (men)/75% of the DRI for choline (women), 30% of the DRI for both vitamins B5 and B12, 15% of the DRI for both riboflavin and folate, 34.5% of the DRI for vitamin D, and 27% of the DRI for vitamin A.
There’s more to nutrition than fat grams and calories. And there’s certainly a lot more to the nutritional profile of an egg than is pictured above.
